On still afternoons, fine crystals bloom on the water. We lift this fleur de sel with a light touch, before it sinks.
Below, larger crystals settle on the clay. A long wooden rake draws them to the bank. Two pairs of hands, one summer harvest.
From the first warm days to the end of summer.
Unwashed. Unrefined. Just drained, dried and put in a tin. The differences are in the crystals.
Delicate flakes, lifted from the surface. A soft crunch that melts on the tongue.
